Method:
Heat 1 oz vegetable oil in a 10" non stick pan. Saute onion, peppers
and zucchini until cooked. Add eggs, salt and pepper. Stir a little
to cover the vegetables with the egg. Top with chopped spinach.
Place into a hot oven and bake at 375' for 10 minutes. Remove and
top with tomato slices and grated cheese.
Finish in the oven for about 10 more minutes until egg is cooked and
cheese is melted. Remove from oven and let stand for 3 minutes.
Cut into 6 wedges and serve.
