ARTICHOKE-GORGONZOLA DIP Courtesy of Inverness Resort & Spa, Denver, Colorado This simple recipe, while not low-fat (although we reduced the fat by using a FF Sour Cream or Greek Yogurt), is rich in flavor. That meant just a few veggie slices and dip were satisfying as an appetizer without needing to "fill up." -- Spa Index Recipe Tester 1 cup Gorgonzola cheese, crumbled 1 cup Parmesan cheese, grated 16 oz sour cream* 3 cloves garlic, minced 6 oz marinated artichoke hearts, chopped 10 oz frozen spinach, thawed In a medium saucepan over medium-low heat, melt cheeses and garlic, stirring continuously until combined. Add artichokes and spinach. Heat dip until hot but not bubbling. Serve with fresh vegetables, crackers, or baguettes.
